Experience the rum aging process at Bodegas Don Pancho, where time, wood, oxygen, and Panama’s tropical climate shape the character of artisanal rum. The tour starts with an introduction to the origin of the base alcohol from the sugar mill and its careful selection for aging in American oak barrels.
You will visit the aging warehouse filled with hundreds of barrels, learning how Panama’s heat and humidity accelerate maturation. Discover the natural evaporation phenomenon called “the angels’ share” and understand how it concentrates flavors and deepens rum complexity.
