Truly a unique experience that showcases the love & dedication Chef Hernán & team have placed in each and every detail that lands itself in front of you. He dedicates his craft to serving but a small audience nightly so he may focus on each dish, making sure it meets his own high standards before personally delivering it tableside, then wowwing you further in explaining its story, ingredients & how best to enjoy it, utensils optional with some 😀 From a delicate buckwheat waffle shaped like a butterfly, to the unassuming crudité of fresh local vegetables that had layers of flavor profiles, to a cobia-inspired dish of tongue, jaw & cheek meat that is usually thrown to stock, each dish kept me fascinated & just guessing how did they do that?! We immersed ourselves in the 11-course pairing with organic wines that complimented each dish perfectly, rounding out dessert courses with a house-made cocktail of elderflower/kombucha/coconut water, lemongrass tea, geisha coffee, and a super-fun Black and White Russian to end the evening after touring the R&D lab housing some real scientific equipment, in-house fermentation area & leaving with giftboxes of carrot cake & honey, to name a few things. Hernán, mom Jeanette & Christian were all so welcoming, knowledgeable and really strive to show just what their cuisine is all about.
