The restaurant Donde Jose has been awarded in 2015 and 2016 with the El Buen Tenedor award, for its innovation in Panamanian cuisine. The Panamanian chef Jose Olmedo Carles shares why his restaurant has been chosen as the most innovative.
A building at the entrance of the Old Town covers its vertical windows with purple curtains. A Panamanian gastronomy laboratory operates inside. On one of its walls there is a laminated form that says 'Donde Jose'.
The leader of the experiments is Jose Olmedo Carles, a young chef who has focused his vision of the stove using native material, reinventing and rediscovering in the curious palates the essence of the best food that cauliflowers have been cooking for centuries in Panama.
The dishes on the menu invite you to experience the Panamanian flavor with foods such as jobo, pixbae, breadfruit, mango, Chinese or square guineo, which resurface with a sophisticated air in the dishes. And the matter does not end there, because in Donde Jose a narration is heard that nourishes the commensal of knowledge with the presentation of each particular dish. In addition, for these months Carles has introduced as an innovation a kind of breakfast at dinner.
